Ingredient List for your Protein Crab Cakes:
Crab Salad
- Lump Crab
- Limes
- Pico de Gallo
- Cilantro
- Chili Lime Seasoning
Corn Cakes
- Protein Pancakes Mix
- 1 can Organic Creamed Corn
- Sugar
- Coconut Oil
- Avocado
- Sriracha Ranch Dressing
Make the Crab Salad
Using your hands, break up crabmeat and toss it into a bowl. Add the juice of 1-2 limes, a few spoonfuls of pico de gallo, and a palmful of chopped cilantro. Season with chili lime seasoning. Refrigerate until ready to use.
Make the Corn Cakes
Follow the package directions to make protein pancakes, replacing the liquid with 1 can of creamed corn. Add a couple pinches of sugar. Mix until combined. Heat coconut oil in a large skillet or on a griddle over medium-high heat. Drop corn cake batter onto hot griddle and cook until edges are golden crispy and the middle is fluffy. Flipping halfway through. Dress your cake with crab salad, top with diced avocado, and a drizzle of Sriracha Ranch.
